Description
The chef's knife is the knife you'll hold most often, and at 210 mm you have plenty of blade for heavy-duty work. Despite its 45 layers of Damascus steel, this model stays light and easy to handle.
Blade construction
At the core is AUS10, complemented by nickel, SUS410 and J1 stainless steel. These four types of steel are forge-welded together at high temperature into 45 layers, which makes the blade hard and strong and keeps the edge sharp for a long time.
The pattern you see on the blade comes from the different carbon content of each type of steel, which causes them to take on different colours during forging. No two knives look exactly alike.

Rosewood with an ebony ferrule.
How this knife is made
At least four master craftsmen work on every Kikuichi knife, each responsible for their own step in the process. Forging the steel and sharpening the blade are done by different hands.
