Description
A 150 mm paring knife is for the kind of work where you guide the blade with your fingers rather than your arm. That's why this model is kept light: the AUS10 core sits between three layers of steel, making the blade strong without adding weight.
Japanese steel, Canadian wood
Hazaki is the only company that combines Japanese forging techniques with Canadian woodworking. The handles are sawn, sanded, oiled and assembled by hand in Montreal, which makes every knife just a little bit different.
The knives are designed with input from professional chefs. Lines, shapes and weights are rethought and tested time and again before a model goes into production.

The handle is made of G10 in dark grey. That material is unaffected by moisture, which matters for a knife that's held often and rinsed frequently.
